Immersive and tasting learning in businesses, experiences, itineraries, routes, and tours
The WorkLab complements classroom learning with sensory and immersive tours in San Pedro and San Andrés Cholula. It includes appetizers, menus, culinary traditions, criollo corn, cacao foam, mezcal, UNESCO talavera pottery, the Mole Poblano experience at Cosme del Razo Market, the Vive y Viaja por Cholula immersive dinner, and a craft beer tour.
II. In-person WorkLab — 15 field hours
Friday 18 (9:00–10:30 PM), Saturday 19 (2:30–5:30 PM and 9:00–10:30 PM), Sunday 20 (9:00 AM–7:00 PM). In-person participants only.
Field itinerary
September 18
- Cocktail dinner (2) and appetizers (5) for networking and integration.
September 19
- Visit to San Gabriel Arcángel Convent and Royal Chapel.
- Meal with criollo corn exhibition (3 courses, flavored water included).
- Toltecalli visit with pre-Hispanic pottery designs.
- Plaza de la Concordia: cacao foam and cholulteca muégano tasting.
- Vive y Viaja por Cholula immersive dinner with view of Our Lady of Remedies Sanctuary.
September 20
- Mole Poblano experience at Cosme del Razo Market.
- Immersive mole workshop with 3-course tasting menu.
- Tour of 3 craft breweries.
- Free evening for optional mystery guest evaluation.
What the WorkLab includes
Includes: Cocktail dinner (18), criollo corn meal, cacao foam, muégano, immersive dinner (19). Mole experience with 3-course menu (includes 1 mezcal and flavored water) and beer tour (20). Tourism Secretariat certified guide.
Not included: lodging, additional alcoholic beverages, tips, and VAT.
